The Monday before Christmas my gastroenterologist (gut doctor) diagnosed me with a gluten sensitivity. This means that any food that has wheat, rye, triticale or derivative thereof is unsafe for me to eat. I am doing research and it seems I don't have it nearly as bad as some but I am learning to be very careful. I'm wondering if any of my fellow mers have this also and if so whether or not I could ask you lovely people for answers.

I don't have a gluten sensitivity (that I know of), but my ex used to be gluten sensitive. (Well he probably still is lol, but I don't speak with him anymore) He also couldn't eat dairy, eggs, or corn. I'm not entirely sure if I can help any as I don't know what kind of questions you have, but I'm hoping you can find some answers soon. :) Best Fishes Lovely!

I do not have a gluten sensitivity but I do work at TJ's so we get a lot of gluten questions.
Scientifically, gluten is a byproduct of wheat, rye, etc of what you've just listed. It's a type of protein. Obvious products that contain gluten include: bread, pasta, crackers, and oats.
The basic definition of gluten-free labeling is:
"Per the United States Food and Drug Administration (FDA) gluten free labeling regulation, a product that displays a “Gluten Free” claim on the label has been validated to contain less than 20 parts per million (ppm) of gluten."

There are gluten-free breads and pastas, as well as other products. Pure maple syrup does not have gluten in it (I've gotten this question before several times); if it's processed it might. Fruits and veggies are are obviously gluten-free and healthy for you.
Basically you just need to carefully read labels of gluten-possible products. I know for TJ's we include a list (the earlier source I listed) but that's our own products. For other stores, you'd probably have to make your own list or research their websites if they have one. There are lots of online sources stating gluten-free products and include other dietary help so you just need to google them.

Severe celiac here, diagnosed some ~4 years ago I think? I suffer a reaction at even under 15 parts per million. :(

I found that eliminating most bread products helped my stomach a lot.

I've got ibs and acid problems too and now my setup where the people I live with were sharing meals with me because of my crazy schedule, well I can't really have what they cook anymore. :( I'm doing a lot minus grains except I found gluten free hot cereal and some weird bar thing. I'm also struggling with the very real danger of developing diabetes. I feel like I can't eat anything now and it's scary and confusing.
