Definitely diving games and swimming races in the pool.
When I'm out the pool I do story time and hair braiding as well.

I made my own game from a Mad lib and nail polish spinner.

Read a mermaid story, or better yet, do a few tunes on a ukulele (they are pretty easy to learn and super fun)
