Hi everyone!

I'm trying to make candied nuts for the holidays, but I keep running into issues with texture and consistency. Sometimes they come out sticky, and other times, they're too hard or burn slightly. I'm following recipes that call for sugar, water, and nuts, but I’m wondering if anyone has tips to make sure they turn out perfectly crunchy without being overly sticky?

Also, should I be using a candy thermometer to get the sugar right, or is there an easier way to eyeball it? Any advice would be super appreciated!
